    1 ready-made, prepared 9-inch piecrust
    3 cups diced broccoli
    2 tablespoons butter or margarine
    1/2 cup chopped yellow onion
    1 teaspoon grated lemon peel
    1/2 teaspoon salt
    1/4 teaspoon black pepper
    4 large eggs
    1 1/2 cups milk
    3 tablespoons all-purpose flour
    1/2 teaspoon Dijon-style mustard
    1/2 cup shredded Swiss cheese

    Recipe



    1. Preheat oven to 375F. Fit piecrust into a 9-inch quiche or pie pan, trimming any excess dough. Prick with fork. Line dough with foil; fill with dried beans. Bake for 10 minutes. Remove foil and beans. Bake for 5 minutes longer. Transfer crust to a wire rack to cool.


    2. In a large pot, bring 2 quarts of water to a boil. Add broccoli; cook until just tender, about 5 minutes. Drain broccoli and set aside.


    3. In a large skillet, melt butter over medium heat. Add onion; cook until tender, about 5 minutes. Stir in broccoli, lemon peel, salt, and pepper; remove from heat.


    4. In a medium bowl, combine eggs, milk, flour, and mustard. Mix until smooth.


    5. Sprinkle half the cheese into crust. Top with broccoli mixture. Pour egg mixture over broccoli. Top with remaining cheese. Bake quiche until center is just set, about 40 to 45 minutes. Transfer to a wire rack to cool slightly. Serve warm or at room temperature.
