    List of Ingredients




    1 egg
    1/3 cup milk
    1/2 cup cornmeal
    1/2 cup flour
    1 tsp. salt
    1/2 tsp. pepper
    1/2 tsp. cayenne pepper
    Vegetable oil for frying
    4 bass fillets (about 6 ounces each)
    Tartar sauce, optional

    Recipe



    1. In a shallow bowl, whisk together egg and milk. In another shallow bowl, combine cornmeal, flour, salt, pepper, and cayenne pepper.

    2. In a large skillet, heat about 1/2-inch of oil over medium heat to 350º. Dip fish fillets in egg mixture, then dredge in flour mixture.

    3. Transfer fillets to hot skillet and cook for 4 to 6 minutes, turning once, until golden brown and crispy on both sides. Drain on paper towels. Serve with tartar sauce if desired. Yield: 4 servings.
