    List of Ingredients




    1 large peeled potato
    1/4 pound butter
    6 oz. salt pork
    1 medium onion
    1/4 t. Tabasco sauce
    1 T. Worcestershire
    2 small cans clams (or about 1 pound fresh clams)
    1 t. black pepper
    Salt to taste
    Half and half, plus water to cover the clams

    Recipe



    Dice potato and parboil until just about done, using enough water to cover the potato. Saute salt pork and onion in butter. In another big pot, cook the clams. If not enough juice, then add water so they are just covered. Add potato mixture and salt pork mixture to the clams. Add the seasonings. Be sure mixture is just up to hot, and then add just enough half and half to equal the amount of the clam/potato mixture. Stir, bring to "nice and hot" but not boiling...and eat. Serves 4
