    1 1/2 cups dry bread crumbs
    1/2 tsp. each dried dill weed and basil
    1/2 tsp. lemon pepper
    1/2 tsp. salt
    1 1/2 lbs. haddock fillets
    3 Tbsp. vegetable oil

    Recipe



    Pour bread crumbs into a pie plate and mix with herbs
    and lemon zest. Rinse the fish and pat completely dry.
    Cut into 2-inch strips. Pour oil into another pie plate. Roll
    the pieces of fish in oil then in crumbs to coat all sides.
    Arrange breaded strips of haddock on the baking sheet
    about 1-inch between pieces. Bake in a 400 degree oven
    until the fish done in the center, about 10 minutes. Makes
    4-6 servings. NOTES: You can also use Boston Blue, Hake,
    Orange Roughy, Catfish, or Tilapia
