    3 egg whites
    1-1/2 - 2 cups icing sugar, sifted
    1 tbsp lemon juice OR 1/4 teaspoon cream of tartar

    Put egg whites in a large bowl, add 2 tablespoons of sugar and beat for 3 minutes with perforated spoon, fork, or wire whisk. Repeat until 1-1/2 cups of sugar are used. Add lemon juice or cream of tartar gradually as mixture thickens.

    Add sugar by spoonfuls, beating until icing is stiff enough to spread. To test, place a little of the mixture on the back of a spoon and make a cut through the mixture with a knife. If icing remains parted, it is of the right consistency. Spread a thin layer on cake and allow to harden, then spread with a thick layer. Crease for cutting or decorate with remaining icing forced through a pastry tube. Colour with fruit colouring for decoration.
