    Parmesan Muffins

    List of Ingredients

    2 cups all-purpose flour
    3/4 cup grated parmesan cheese
    2 tsp sugar
    2 tsp baking powder
    2 tsp italian seasoning
    2 tsp dried basil, parsley or cilantro flakes
    1/2 tsp baking soda
    1/2 tsp salt, optional
    1 egg
    1 1/4 cups buttermilk
    1/4 cup vegetable oil

    Recipe

    1 In a large bowl, combine the first eight ingredients. In a small bowl, beat egg, buttermilk and oil. Stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Bake at 400° for 20-22 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
    2 Yield: 1 dozen.
    3 Nutritional Analysis: One muffin (prepared with egg substitute equivalent to one egg and without salt) equals 164 calories, 287 mg sodium, 6 mg cholesterol, 19 gm carbohydrate, 6 gm protein, 7 gm fat, 1 gm fiber. Diabetic Exchanges: 1 starch, 1 fat, 1/2 meat.
