    Bread: Banana Loaf

    List of Ingredients

    1 cup butter or margarine
    3 Tbs sour milk
    3/4 cup white sugar
    2 cups flour
    3 ripe bananas (or substitute equivalent amounts of other
    fruit/vegetable)
    1 tsp baking soda
    2 eggs
    1/2 tsp salt
    1/2 cup walnuts (optional)
    1/3 cup raisins (optional)

    Recipe

    1 Preheat oven to 350F.
    2 Mix together butter/marg. with sugar. Add eggs, salt & baking soda (add
    3 baking powder at this point to make a fluffier cake) Mix well.
    4 Add bananas & milk, mix well. Add flour. For fluffier loaf (cake,
    5 cupcakes), now add more milk to make a runnier batter.
    6 Pour into greased loaf pans, muffin cups or cake pans.
    7 Bake for 30 minutes, then check with a toothpick if done. If not done,
    8 continue cooking and checking every few minutes.
    9 For loaves I find that they begin to burn on the tops, so I just lay a
    10 piece of foil over them to solve that problem.
    11 A couple loaves in the oven at once may take up to an hour. Cakes and
    12 muffins don't take as long.
    13 After they are cooked, turn loaf pans on their sides on a rack to cool.
    14 Let cakes & muffins cool as they are in the pan.
    15 Cakes taste wonderful with a cream cheese icing!
    16 Freeze once cooled in plastic bags. I've frozen them for months, but
    17 not long 'cause they get eaten up so quick! So I don't know the
    18 maximum freezing time.
