    2 eggs, slightly beaten
    8 oz sour cream
    1 teaspoon vanilla
    1/4 cup oil
    1/4 to 1 cup sugar or brown sugar (this just depends on what kind of muffin
    you are making, how sweet you want it and how sweet any fruit you are using
    is. It can also go in with the dry ingredients below)

    Mix this together in a bowl. If using bananas, mash 2-3 bananas and add
    them to this "wet" mixture.

    Then mix 2 cups self rising flour, a teaspoon or so of cinnamon or nutmeg if
    desired, and anything like chocolate or cinnamon chips or nuts (1 cup of
    these added ingredients).

    Using a fork, stir the dry ingredients into the wet just until moistened.
    Pour into greased muffin tins and bake at 425 for 20 minutes.
