    Chicken: Chinese Chicken Morsels

    1 lb. boneless, skinless chicken breasts (2 cups)
    1/2 C. lemon juice
    1/4 C. soy sauce
    1/4 C. Dijon mustard
    2 tsp. vegetable oil
    1/4 tsp. cayenne pepper
    1 C. regular uncooked rice *

    Recipe



    Cut chicken breasts into 1" cubes. Mix lemon juice, soy sauce, mustard, oil, and pepper. Put marinade and chicken cubes in 1-gallon bag and freeze.

    To Prepare: thaw chicken and remove from marinade. Preheat oven to broil and/or 550. Warm marinade in small saucepan. Place cubes about 1" apart or so on broiler pan treated with cooking spray. Broil 4-5" from heat for 7 minutes, brushing with marinade once. Turn chicken cubes, and broil another 4 minutes. Meanwhile, prepare rice. Heat remaining marinade and serve over rice. Makes 4-6 servings.

    Note: For a luncheon alternative, toss chicken morsels with mixed salad greens, shredded carrots, cherry tomatoes, chopped green bell pepper, sliced water chestnuts, and crutons. Use your favorite dressing.
