    Sauce: Freezer Instant White Sauce Cubes

    White Sauce MIx
    1 cup flour
    1 tablespoon salt
    1/2 teaspoon pepper
    16 tablespoons cold butter
    Onion Sauce Cubes
    4 tablespoons onion powder

    Recipe



    Sauce Mix: Combine flour, salt and pepper in an 8 x 8-inch square pan.
    Working quickly, use your hands to cut the butter well into the flour
    leaving no lumps. Do not use a food processor blender to do this. Use
    a rubber spatula to press mixture evenly in the pan. Freeze,
    uncovered, until solid. Remove the pan from the freezer and let its
    contents soften for a minute or two. Cut the frozen mixture into 8
    equal rectangles.

    Remove 1 rectangle and cut it into 16 small cubes or pieces. The cubes
    don't have to be neat or exactly 16, just as long as they are small.

    Wrap the 16 or so cubes in a flat packet of aluminum foil. Repeat for
    the remaining 7 rectangles. Place the packets in a small plastic bag;
    label the bag and return to freezer.

    Onion Sauce Cubes: Follow above directions but add onion powder to the
    flour mixture before making the same cube mixture.

    To use: Bring 1 cup milk to scalding; add the contents of 1 packet of
    cubes; cook and stir over low heat until thickened.

    Variations on White Sauce Mix:

    Mushroom: Saute 1 cup sliced fresh mushrooms in a small amount of
    butter; add to the thickened sauce.

    A La King Sauce: To thickened sauce, add 2 tablespoons finely minced
    and sauteed green pepper and 1 small minced pimento.

    Newburg Sauce: Use 3/4 cup milk mixed with 1/4 cup dry sherry, 1
    teaspoon onion powder, 1 teaspoon lemon juice, 1/2 teaspoon
    Worcestershire sauce, and 1/2 teaspoon parsley flakes.

    Curry: Mix 2 teaspoons (or more to taste) curry powder into thickened
    sauce.
