    Sides: Freezer Mashed Potatoes

    5 pounds potatoes
    8 ounces low fat cream cheese
    1 cup fat free sour cream
    2 teaspoons onion salt
    1 teaspoon salt
    1 pinch pepper
    2 tablespoons butter or margarine

    Recipe



    Peel, cut and cook potatoes (and garlic if adding) until tender. Mash and add all ingredients except butter. Put into large greased casserole. Dot with butter. Bake, covered at 350F for 30 minutes. If making ahead, cover and refrigerate or freeze. Thaw before baking.
    Serves 10-12.
    When I make these, I prepare as above, and then spoon into 3 medium freezer bags (that's enough for 1 meal for our family of 4). When I take it out of the freezer, I just pop them out of the bag and into a casserole dish, let stand until they thaw and then dot with butter, cover and bake. They are never runny or watery, just
    delicious.
