    18 cups peeled apple slices
    3 tablespoons lemon juice
    4 1/2 cups sugar
    1 cup cornstarch
    2 teaspoons cinnamon
    1 teaspoon salt
    1/4 teaspoon nutmeg
    10 cups water

    Recipe



    1) Toss apple slices with lemon juice in a large bowl; set aside.

    2) In a Dutch oven or large cooking pot combine sugar, cornstarch, cinnamon,
    salt and nutmeg.

    3) Add water; bring to a boil. Boil for 2 minutes, stirring constantly.

    4) Stir in sliced apples; return to boil.

    5) Reduce heat; cover and simmer until apples are tender (about 6-8 minutes).

    6) Cool for 30 minutes. Ladle into freezer containers leaving 1/2-in.
    headspace, or use high quality zip-top freezer bags. Cool at room temperature no
    longer than 1-1/2 hours.

    7) Seal and freeze; store up to 12 months.

    8) To use, thaw completely in refrigerator. Prepare pie according to your
    usual pie instructions using a homemade or premade pie shell. The pie filling
    can also be used to make Apple Crisp.

    YIELD: 5 1/2 quarts (enough for about 5 pies)
