    Cookies: Chocolate Chip w/Nuts & Oatmeal Raisin

    Ingredients you'll need:
    Flour
    Salt
    Baking Soda
    Brown Sugar
    Granulated Sugar
    Butter or margarine - 2 cups/4 sticks
    vanilla extract
    Eggs - 4
    12 oz pkg choc. chips
    Chopped walnuts (optional) - 2 cups
    Cinnamon
    Quick Cooking Oats

    4 mixing bowls - 2 large, 2 medium
    Measuring Cup(s)
    Measuring Spoons
    Elec Mixer
    2 wooden spoons
    Wax Paper
    2 large Ziploc freezer bags

    Keeping organized is important for me. I first cleared my kitchen counter
    and had the dishwasher emptied (or sink clean and full of hot, soapy water)
    so I could clean up as I go. I put 1 large and 1 medium mixing bowl and 1
    wooden spoon on left, 1 large and 1 medium mixing bowl and 1 wooden spoon on
    right. The left (for me) is Chocolate Chip - The right is Oatmeal Raisin (I
    remembered it by putting them alphabetically). Try and put each ingredient
    AWAY after you've measure it into the bowls -- that will keep things less
    confusing AND your kitchen will be almost clean by the time you're all done!

    Get out all ingredients and place in the middle of the counter, between the
    two sets of bowls.

    In the MEDIUM mixing bowls:

    2 1/4 cups flour - LEFT med bowl
    2 cups flour - RIGHT med bowl
    1 teaspoon salt - LEFT med bowl
    1 teaspoon salt - RIGHT med bowl
    1 teaspoon baking soda - LEFT med bowl
    1 teaspoon baking soda - RIGHT med bowl
    1 1/2 teaspoon cinnamon - RIGHT med bowl

    Using it's own wooden spoon, mix dry ingredients thoroughly in each bowl.
    Set each bowl aside (keeping them on the Left and Right hand sides of the
    counter!) At this point, I put extra flour, salt, bak soda and cinnamon
    AWAY.

    In the LARGE mixing bowls:
    3/4 cup brown sugar - LEFT large bowl
    1 cup brown sugar - RIGHT large bowl
    3/4 cup granulated sugar - LEFT large bowl
    1 cup granulated sugar - RIGHT large bowl
    1 cup softened butter/margarine - LEFT large bowl
    1 cup softened butter/margarine - RIGHT large bowl
    1 teaspoon vanilla extract - LEFT large bowl
    1 teaspoon vanilla extract - RIGHT large bowl

    At this point, I put remaining brown sugar, sugar and vanilla AWAY!
    Using electric mixer, beat ingredients in each large bowl until creamy and
    smooth. To this, add:

    2 eggs - LEFT large bowl - beat eggs in thoroughly.
    2 eggs - RIGHT large bowl - beat eggs in thoroughly.

    To the LEFT large bowl, add dry ingredients from LEFT medium bowl and mix
    well.

    To the RIGHT large bowl, add dry ingredients from RIGHT medium bowl and mix
    well.

    (At this point, I put medium bowls in dishwasher, along with measuring
    spoons)

    To the LEFT large bowl, add 12 oz pkg of chocolate chips and 1 cup chopped
    nuts, Mix well with wooden spoon.

    To the RIGHT large bowl, add 3 cups of Quick Cooking Oatmeal and 1 cup
    chopped nuts, and mix well with wooden spoon.

    You now have 2 large batches of each kind of cookie.

    Tear off 8-10 squares of waxed paper - about 11 x 11 inches each. Spray ONE
    sheet of waxed paper lightly with Pam or other non-stick spray. Spoon out
    several mixing spoonfuls of dough onto this sprayed sheet, and use the sheet
    to roll and press the cookie dough into a "log" about 8 inches long, 2
    inches across. Press firmly to eliminate air pockets. Roll if off the
    sprayed sheet and onto a clean waxed paper sheet, roll up, tucking ends in
    (burrito style!). Continue forming these "logs" - I had 4 logs of chocolate
    chip dough, and 5 logs of oatmeal cookie dough, and enough dough left over
    to cook a dozen cookies of each kind today.

    Place all the choc. chip dough logs in a large ziploc bag, and label "Choc
    Chip Cookie Dough - 375 - 8-10 mins". Place all Oatmeal Raisin cookie dough
    logs in a second ziploc bag and label "Oatmeal Raisin Cookie Dough - 375 -
    12-14 mins".

    You only need to pull out a dough log out of the freezer about an hour
    before wanting to bake it. Slice or spoon into cookie size portions onto
    ungreased cookie sheet, bake at 375 degrees for 8-10 mins for choc chip,
    12 -14 for oatmeal.

    I had enough dough left over to cook up one batch (1 dozen) of each kind of
    cookie today.
