    Pork: Sweet and Sour Pork

    List of Ingredients

    3/4 lb of cooked boneless pork (use pork from a roast or porkchops
    when bulk cooking)
    1 bag of frozen stir fry veggies




    Recipe

    I put the pork in a freezer bag and put it with the veggies. I put a freezer bag of rice with these. Label in pantry -- a jar of sweet and sour sauce (approx. 14 ounces) and 1 can of pineapple chunks (8 ounces)
    Take pork and rice out of freezer the night before. Let thaw in refrigerator.
    When ready to finish meal, reheat rice in microwave. While rice is heating, heat 1 tsp veg oil in large frying pan and add pork. Cook until browned. Add vegetables and a tbsp or so of water and cook on medium heat, covered, until the veggies are crisp/tender. Uncover.
    Stir in sweet and sour sauce. Add drained pineapple. (save juice for smoothies :-)) Cook until heated through.
    Serve over warmed rice.
