    2 medium potatoes - peeled and chopped
    2 large carrot - peeled and chopped
    1/3 cup milk
    1 tablespoon butter
    salt and pepper to taste
    1 medium onion
    1 tablespoon olive oil (or cooking oil)
    2 garlic cloves - minced
    1 teaspoon cumin
    4 carrots - thinly sliced
    1/2 pound ground round
    1 1/2 cups stewed tomatoes - chopped, reserving juice
    2 tablespoons tomato paste
    3/4 cup vegetable broth
    1 1/2 cups corn kernels - cooked
    1 1/2 cups peas – cooked

    Preheat oven to 400 degrees F. In a Dutch oven cover the potatoes
    and carrots with water (approximately 2" higher than the
    veggies). Boil approximately 20 minutes until the vegetables are
    tender. Drain well and mash. Add milk, butter, salt, and pepper.
    Continuing to mash and stir until well combined.

    In a large non-stick skillet, heat oil on low heat. Add chopped
    onions and sauté for approximately 5 minutes or until soft. Add
    garlic, cumin, carrots, and beef. Sauté until beef is no longer
    pink Skim fat as needed. Add tomatoes and reserved juice, tomato
    paste and vegetable broth. Simmer until mixture is reduced by half.
    Stir in corn, peas, and add more salt and pepper if needed.

    Pour mixture into a 10" pan, and smooth potato mixture on top.
    Bake for 20 minutes or until set.

    This recipe is a great way to use up a lot of leftovers all at once.
    You can use left over veggies for any of the veggies listed. You can
    use any ground meat from another meal as a substitute for the ground
    beef. You can substitute leftover mashed potatoes for the fresh
    mashed potatoes, just add cooked carrots to the mixture, mash and
    season to taste. You could use the water in which the veggies were
    cooked as a substitute for the vegetable broth. You could use left
    over meat spaghetti sauce for the meat and tomato mixture and add any
    other leftover veggies you might have, or you could use left over
    taco meat and add the tomatoes. Or you can leave the meat out
    entirely and simply continue with the tomatoes to make this meal
    vegetarian. You should also feel free to modify the spices to your
    family's liking. Finally you can even add a sprinkle of cheese
    to the top! This recipe really is a crowd pleaser and the variations
    are endless!
