    I personally like to use boned chicken legs instead of chicken breasts. Chicken legs are fatter, but they taste better too. To make it a complete meal, steam some cauliflowers, mushrooms, or carrots and pour the sauce over them.



    List of Ingredients


    • 4 chicken breasts
    • 2 Tbsps butter
    • pinch of salt & pepper
    • 2 Tbsps vinegar
    • 1 Tbsp lemon juice
    • 2 Tbsps flour
    • 2 Tbsps water
    • 2 Tbsps vegetable oil
    • 2 egg yolks


    Instructions


    1. ) Pound the chicken slightly to tenderize it. With a fork, prick the chicken a bit. Sprinkle pinch of salt and pepper, and then coat the chicken with some flour.
    2. Heat the oil and 2 tbsp of butter in a pan. Place the chicken in the pan and cook until both sides are golden brown. Keep on cooking until it is cooked thoroughly.

    3. In the in the meantime, make the butter sauce. Simmer the vinegar and water in a saucepan until it reduces to half.
    4. Remove the saucepan from the stove to cool slightly. Add the egg yolks and stir well.
    5. Add the butter and lemon juice. At a low heat, Stir the sauce and mix until smooth.
    6. ) Remove the chicken from the pan. Pour the butter sauce over the chicken and serve.
