    3 3/4 cups chicken -cooked and chopped
    1 1/4 cups diced onion
    1 Tbs chili powder
    salt and pepper
    8 flour tortillas -- (8 to 12)
    3 cups co-jack cheese -- shredded, reserve 1
    1 1/2 cups sour cream
    1 can diced jalapeno peppers -- (4 ounce)
    oil for frying

    Recipe



    Saute onions in oil until tender. Add cooked chicken, chili powder, 2 cups cheese, salt and pepper. Mixture may be frozen at this point in a gallon freezer bag for use later. Thaw before using. Spoon enough chicken mixture on each tortilla to cover approximately one third of it. Roll sides of tortilla in towards middle and roll from one end until tortilla overlaps. Secure with toothpicks. Fry filled tortillas in 2-3 inches oil until browned. Place sour cream and as much diced jalapeno peppers as desired in a blender and process until smooth. Serve with chicken rolls. Top with reserved cheese. May heat in oven or microwave briefly to melt cheese. Serve with shredded lettuce, diced tomatoes, salsa, guacamole, cheese, black olives and any other desired toppings.
