    Parmesan Chicken Fingers

    1 Tbs cooking oil (olive oil is fine, too)
    1 to 1 1/4 pounds skinless, boneless chicken breast halves
    1/3 cup finely grated Parmesan cheese
    1/3 cup fine bread crumbs, Italian style (or use Panko)
    1 tsp dried basil

    Recipe



    Heat the oil in a 12-inch nonstick frying pan. Cut the chicken into 1/2-inch strips. In a zipper-top plastic bag, combine the cheese, bread crumbs and basil. Place chicken fingers in crumbs, shaking bag to coat well. Place chicken pieces in hot oil and cook for a total of 4-5 minutes, turning once to brown. Remove from skillet and cool slightly before eating.
