    5 (8~ounce) firm pears, peeled. quartered, and cored
    1 lemon, peeled, quartered, and seeded
    1/4 to 1/2 cup sugar

    Recipe



    1. In a food processor, chop the pears and lemon with on/off pulses in several batches (about 4 cups chopped fruit).
    2. In a large saucepan, combine the fruit and sugar.
    3. Bring to a boil. Reduce heat. Boil gently, stirring occasionally, about 30 minutes until the mixture reaches the consistency of applesauce.
    4. Puree in a blender or processor, if desired.
    Yield: 3~1/2 cups.
