    1 large ripe pineapple
    3/4 cup sugar
    1 cup half and half

    Recipe



    Peel and core the pineapple. Cut it into chunks and put it into a food
    processor with the sugar. Process until it looks like "crushed" pineapple. Transfer
    the pineapple to a small pan and bring to a boil for 1 full minute. Set aside
    to cool, then whisk in the half and half. Transfer the mixture to an ice cream
    maker and freeze according to manufacturer's directions. Put the finished
    sherbet in a storage container and freeze until firm.
    Makes a little less than 1 quart.
