    Corn and Potato Soup

    Source of Recipe

    Pantry Challenge Frugal Minds

    List of Ingredients

    1 cup cubed raw potatoes

    1/2 cup chopped onions

    1/2 cup nonfat dry milk

    3 tablespoons flour

    1 teaspoon salt

    1/8 teaspoon black pepper

    1/8 teaspoon paprika

    2 cups water

1 cup canned whole kernel corn

    Recipe

Place potatoes and onions in water; bring to a boil and cook for 15
minutes. Sprinkle nonfat dry milk, flour, salt, pepper and paprika over
surface of 2 cups water in top of double boiler; beat with rotary beater
until blended and smooth. Place over boiling water and cook until
slightly thickened, stirring constantly, about 10 to 15 minutes. Drain
potatoes and onions; stir into sauce. Add corn. Cook 5 minutes longer.
    Serve hot. Makes 4 servings.

[I've always just made my own double boiler by placing one saucepan over
another that is slightly larger. You boil water in the bottom pan, and
make your sauces in the top pan]
