    List of Ingredients




    * 8 thick sausages
    * 1 large onion, peeled, cut into 8 wedges
    * 1/2 oz. butter
    * 6 oz. small mushrooms, sliced thickly
    * 1 lb. baby potatoes, halved or cut into chunks
    * 1 1/4 pints chicken stock
    * Fresh thyme sprigs and a bay leaf
    * 1 tablespoon cornflour
    * Salt and pepper
    * Fresh chopped parsley

    Recipe



    Fry the sausages and onion in butter for 10 minutes until brown all over. Remove from pan and drain, then keep warm. Add mushrooms to the pan and cook for a few minutes until well browned. Remove and keep warm.

    Put potatoes, stock, thyme and bay leaf into the pan. Cover, bring to the boil and simmer for 10 minutes. Cut sausages in half, return to pan with onion and mushrooms and simmer 10-12 minutes until potatoes are tender. Mix cornflour with a little water and add to the pan to thicken the stew. Season to taste. Remove thyme sprigs and bay leave before sprinkling the stew with parsley.

    Serve with green beans and carrots.
