    APPLE CRISP STRUDEL

    Source of Recipe

    Cara

    List of Ingredients

4-5 apples, peeled, cored and chopped into fairly small pieces
    1 cup quick-cooking rolled oats
1 cup dried cranberries (opt) or blueberries!!
    1/2 cup packed brown sugar
    1 tsp cinnamon
pinch of nutmeg and allspice (again, optional, I don't use)
1/4 cup margarine, melted ~~ or vegetable spray!!
    3 tbsp water
1/3 cup dry fine bread crumbs
    2 tbsp white sugar
    6-8 sheets phyllo pastry

    Recipe

In a large bowl combine the apples, cranberries, brown sugar, spices.
In a small bowl combine the melted margarine with the water.
In another small bowl combine the bread crumbs with the white sugar.

On a large baking sheet that has been lined with parchment paper, place one sheet of phyllo (with the long side facing you)
Brush with a bit of the margarine/water mixture. Sprinkle a bit of the bread crumb mixture over.
Place another sheet of phyllo on top and keep repeating with the water/margarine and bread crumb mixture until all of the phyllo sheets have been used.
Spoon the apple mixture towards the bottom part of the phyllo strips(closest to you) leaving at least 1" border.
Roll up the phyllo sheets/apple into a cylinder.
Score diagonally with a knife just through the top couple of layers of phyllo, to make it easier to cut when baked.
Brush with any remaining margarine. Sprinkle with a dash of cinnamon and a bit of white sugar.
Bake at 350* for 50-60 min till golden, and apples seem tender.
(cover with foil if top is browning too much)

    Yield: 8-10 servings

**If cooking from frozen, bake 1 1/2 hours
