Restaurants around the country have struck oil. Dipping oil, that is. Flavored with a variety of herbs and spices, these liquids are sopped and mopped with bread. Today's recipe request is for Pesto Dipping Oil from Bonefish Grill.
Yield: A little more than 1 cup.
1 cup basil leaves
1/4 cup Parmesan cheese
1/4 cup pine nuts
2 garlic cloves, chopped
1/4 tsp salt
6 Kalamata olives
1/4 cup olive oil
Additional olive oil and bread for serving
Recipe
Using a food processor, combine the basil, cheese, pine nuts, garlic, salt and olives. Process until ingredients form a paste. Slowly add olive oil.
To serve, place a dime-sized portion of pesto paste on plate. Top generously with olive oil to create dipping consistency. Serve with your favorite bread.
