    Quiches can be frozen & reheated in a microwave oven.

    List of Ingredients




    1 (15-oz.) pkg. refrigerated pie crusts
    1-1/2 C. shredded Swiss Cheese
    2 scallions, sliced
    1 (2-oz.) jar chopped pimientos
    2 eggs
    1/2 C. lmilk
    1/4 tsp. salt
    dash nutmeg

    Recipe



    Preheat oven t 375°. Spray 24 miniature muffin cups with no-stick cooking spray. Place unrolled pie crust on work surface. With floured 2-1/2" round cookie cutter, cut 12 rounds. Repeat with other pie crust.

    Press 1 dough round in bottom & up sides of each muffin cup. Place 1 tablespoon cheese in each cup. Top each with a few scallion slices & pimento pieces.

    In a 2-cup measure, combine eggs, milk, slat & nutmeg; beat well with a fork. Pour into crusts, filling each to within 1/4 inch of top. Bake 25 to 30 minutes until golden. Cool slightly; lift quiches from muffin cups with the tip of a knife. Serve warm. Makes 24 mini-quiches.
