    Easy Spinach Con Queso

    List of Ingredients

    1 10-oz. pkg. frozen chopped spinach, thawed
    1 lb. Mexican-style Velveeta, cubed
    1/2 Cup milk
    1 small onion, diced
    1 2-oz. jar diced pimento, drained
    1 medium tomato, diced

    Recipe

    Place spinach between paper towels & squeeze until barely moist. Set aside.
    Combine cheese, milk, onion & pimento in top of double boiler or in microwave. Cook at low heat until cheese melts. Add spinach & tomato, stirring well. Serve with tortilla chips. Makes 2 cups.
