Mini Swiss Quiches

1 15 oz. pkg refigerated pie crust
6 oz or 1 1/2 C shredded swiss cheese
2 T sliced greeen onion
1 T chopped pimentos
2 eggs
1 C milk
1/4 t salt
Recipe
Allow both pie crust pouches to stand at room temperature. Preheat oven to 375 degrees. Spray 24 minature with non-stick cooking spay. Unfold one pie crust and press out fold lines. Place crust on work surface with floured two and half in. cookie cutter and cut 12 rounds and repeat with remaining pie crust. Press dough in each muffin cup and press up the sides.
Placed a teaspoon of chesse in each cup. Top each with a few onion slices and pimento pieces. In a 2 Cup measuring cup combine eggs, milk and salt. Beat with fork and pour mixture in crut. Fill to a quarter inch of top of cup. Bake at 375 for 25 to 30 minutes or until golden brown. Allow to cool slightly and life out of muffin cups with tip of knife. Serve warm.
