    Recipe Introduction

You can make and eat these delicious cousins of the sticky bun in about an hour - if you hurry.

    Easy sticky buns

    without the yeast

    Q. I used to have a recipe for making those wonderful sticky buns without having to go through the long process of using yeast. I have never been a very successful baker, especially where yeast is concerned, and was delighted to find that baking powder version.

    A. There is a recipe called Buttery Caramel Quicks that could be the one Robbins wants. It is the baking powder answer to the very popular yeast-based sticky buns.

    List of Ingredients

1/2 cup butter, at room temperature

1/3 cup plus 1/2 cup firm-packed light brown sugar, divided

    1 tablespoon warm water

    2 cups all-purpose flour

    1/4 cup granulated sugar

    21/2 teaspoons baking powder

    1 teaspoon salt

    3/4 cup whole milk

    1 teaspoon ground cinnamon

    1/3 cup chopped pecans

    Recipe

Preheat the oven to 425 degrees. Melt the butter in a 9-inch-square or 11-by-7-inch baking pan. Sprinkle the 1/3 cup brown sugar and the warm water over the melted butter. Set aside.

In a large mixing bowl, whisk together well the flour, granulated sugar, baking powder and salt. Stir in the milk until a soft dough forms. Turn the dough out on a well-floured surface and coat the top with flour. Roll the dough out to a 12-by-10-inch rectangle, adding more flour as needed to prevent sticking.

In a small bowl, combine the remaining ½ cup brown sugar, cinnamon and nuts and sprinkle over the dough. Starting with the 12-inch side, roll the dough jellyroll fashion, pressing the seam to seal. With a sharp or serrated knife, cut the log crosswise into 12 (1-inch-thick) slices and place cut side down on the brown sugar mixture in the prepared pan.

Bake in the center of the oven about 20 minutes or until golden brown. Turn out into wire racks placed over wax paper to catch any drippings. After a few minutes scoop up any drippings and drizzle them back over the buns. Makes 12 buns.
