    I have lost a recipe. It was a rich coffee cake. It used one box of yellow cake mix, and one box of vanilla instant pudding mix and one box of butterscotch pudding mix. Nuts were on top but I can't remember the other ingredients.

    We found this Cheater Butterscotch Coffee Cake recipe easily. It's one of hundreds of doctored recipes for boxed cake mixes that saw a rebirth in the late '90s following the release of the cookbook, "The Cake Mix Doctor" by Anne Byrn. It's one of the best-selling cookbooks of all time-- giving credence to these quick, tasty recipes that anyone can make from a boxed mix and any number of add-ins. Enjoy!

    List of Ingredients






    DESSERT
    For cake:

    1 (18.25-ounce) box yellow cake mix

    1 (3.4-ounce) box instant vanilla pudding

    1 (3.4-ounce) box instant butterscotch pudding

    4 eggs

    1 cup water

    3/4 cup vegetable oil

    For topping:

    1 cup dark brown sugar

    1 cup chopped pecans

    1 tablespoon cinnamon

    Recipe



    Preheat oven to 350 degrees. Grease a 9-by-13-inch baking pan.

    Combine cake ingredients in a bowl. Beat with an electric mixer on medium speed for 4 minutes, scraping down bowl halfway through beating. In a small mixing bowl, combine topping ingredients and set aside.

    Pour half the cake batter into prepared pan and spread to cover pan. Sprinkle with half the topping mixture. Add the remaining batter and spread to cover topping mixture. Sprinkle batter with remaining topping mixture.

    Bake for 20 minutes. Reduce heat to 325 degrees and bake 30 to 40 minutes longer, or until a toothpick inserted in the center comes out clean. Cool slightly before cutting.

    Makes 15 servings.
