    I would like to have the recipe for Island Rice that is served at JB's on the Beach:

    Filling the request for JB's Island Rice was no effort at all, thanks to Ron Pollack, chef of JB's on the Beach (300 N. Ocean Blvd., Deerfield Beach jbsonthebeach.com.

    Pollack says he frequently provides recipes to guests and was happy to share this one.

    He went above and beyond and included directions for the grilled mahi, one of many fishes he serves alongside the rice at JB's, topped with a fresh papaya salsa.

    List of Ingredients




    • 2 tablespoons unsalted butter
    • 1 1/ 2 teaspoons minced fresh ginger
    • 1 1/ 2 teaspoons minced garlic
    • 1/4 cup diced red bell pepper
    • 1/4 cup diced onions
    • 1/4 cup shredded carrots
    • 2 cups uncooked rice
    • 1 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon turmeric
    • 1/2 cup coconut milk
    • 1 cup water
    • 2 cups low-sodium chicken broth
    • 2 scallions, sliced thin
    • 2 tablespoons chopped parsley

    Recipe



    Melt butter in a heavy bottomed 5-quart pot over medium-high heat.

    Add ginger and garlic and cook 1 to 2 minutes, stirring continuously until fragrant. Add bell pepper, onions and carrots and cook 2 to 3 minutes, or until vegetables begin to soften. Add rice, salt, pepper and turmeric and mix well to coat rice.

    Add coconut milk, water and broth. Mix well, reduce heat to medium and cover pot. Cook for about 15 to 20 minutes, or until liquid is absorbed and rice is tender. Remove lid, add scallions and parsley. Mix well and serve.
