    I'm sharing my method for making rare roast beef. It comes out perfectly, whether you use tenderloin, eye of round or an inexpensive rump roast.

    List of Ingredients




    1 boneless beef roast (about 5 pounds; tenderloin, eye of round, rump roast, etc.)

    Cracked pepper and/or minced garlic


    Recipe



    Heat oven to 500 degrees. Cover the roast with seasoning. (Do not use salt, as it will toughen the meat.) Place in a roasting pan that has been lightly coated with vegetable oil spray. Add ½ cup water to the pan.

    Roast the beef for 5 minutes per pound. Turn oven to its lowest setting, but do not open door. Let beef continue to roast 2 more hours. Remove from oven and slice. Makes 2 to 3 servings per pound.
