    The water added at the end makes the pork good & tender.

    List of Ingredients




    1 pound pork tenderloin
    1 cup self-rising flour (or "regular" flour)
    1 tsp. black pepper
    1/2 tsp. salt
    3 Tablespoons vegetable oil
    1/2 cup hot water

    Recipe



    Wash the meat & blot dry with a paper towel. Cut off the fat & slice the pork into 1/4-inch slices. Mix together the flour, pepper, & salt. Coat the meatin the flour mixture. Heat the oil in a skillet over medium high heat & cook the pork slices, a few at a time, until brown on both sides, about 5 to 6 minutes. Pour off the fat. Return the cooked pork slices to the skillet; add the hot water, and cover. Turn off the heat & let sit for 10n minutes.

    Serves 4 to 6.
