    White House Fettucine Alfredo

    Source of Recipe

    an old White House cookbook

    Recipe Introduction

This recipe was said to be one of President Kennedy's favorites. It is very rich. What makes this dish to tasty is the sour cream. Also, it's important that you toss the pasta with each added ingredient. This presents a better texture & layering of flavors, rather than a "sauce".

    List of Ingredients

12 oz. fettucine (fresh is especially good)
1 stick (1/2 cup) butter, softened
    1 T. minced garlic
    1/4 C. white wine
    1 C. heavy cream
    1 C. sour cream
1/2 - 1 cup freshly grated Parmesan cheese

    Recipe

Cook the fettuccine according to package directions. Meanwhile, melt the butter over low heat in a large pot. Add the garlic & saute 1 minute. Add wine. Drain cooked pasta and add; toss to coat. Add sour cream, then heavy cream, tossing noodles after each addition. Add cheese to taste & serve immediately. (Don't give it time to melt into the sauce; the grittiness adds to the flavor). Makes 6 servings.
