    Orange-Marinated Turkey Breast

    Turkey has a nice, slightly sweet citrus taste. The recipe comes from a caterer whose staff claim it's their favorite dish. The caterer uses a boned & rolled breast (which is purchased already rolled & in an elastic mesh sleeve), but we prefer it on the bone.

    List of Ingredients




    1 C. canola oil
    1/4 C. grated orange rind
    5 C. fresh orange juice
    1/4 C. fresh lemon juice
    2 T. soy sauce
    2 T. chopped fresh ginger
    2 garlic cloves, finely chopped
    1 shallotl, finely chopped
    1-1/2 T. honey
    1 T. Dijon mustard
    1 6-7 pound bone-in turkey
    1/2 tsp. coarse salt, or to taste
    1/2 tsp. freshly ground black pepper,or to taste

    Combine the oil, orange rind and juice, lemon juice, soy sauce, ginger, garlic, shallot, honey, and mustard in a large bowl wide enough to hold all the liquids & the turkey breast. Add the turkey breast & turn it in the marinade to coat it on all sides.

    Cover wtih plastic wrap & refrigerate overnight, turning occasionally.

    Preheat the over to 350°. Remove the turkey from the marinade & set it in a roasting pan. Reserve 2 cups of the marinade. Sprinkle the turkey all over with the salt & pepper. Pour the 2 cups of marinade into the pan.

    Roast the turkey for 15 minutes per pound (about 1-1/2 hrs.), or until an instant-read thermometer inserted into the thickest part of the breast (not touching the bone) registers 160°.

    Carve the turkey int slices baste with the pan juices, and serve.

    NOTE: To use a boneless turkey breast, follow the recipe but use a 4-5 pound boneless, rolled breast. Cook it for 18 minutes per pound (about 1 hour and 10 minutes), or until an instant-read thermometer inserted into the thickest part of the breast registers 160°. Remove the strings before carving.
