    Make it several hours ahead and refrigerate, covered, until serving time so flavors have sufficient time to blend. While looking for sweet pickles to dice, I found a 10-oz. jar of already diced sweet pickles called Sweet Salad Cubes, Deep South brand. They were perfect - they are not the same as pickle relish, just straight, unadulerated sweet pickles.

    List of Ingredients




    3/4 C. mayonnaise
    2 heaping teaspoons Dijon-style mustard, or to taste
    1/2 tsp. salt
    1/4 tsp. white pepper, or to taste
    1 pound honey baked ham, cut into 1/2-inch dice
    3/4 cup fine-diced raishes, about 8 large
    1/2 cup fine-diced sweet pickles
    6 hard-cooked eggs, peeled
    Bibb lettuce
    Chopped parsley

    Recipe



    Whisk together mayo, mustard, salt & white pepper to make a dressing. Place ham, radishes, sweet pickles & four fine-diced eggs in a large nonreactive mixing bowl. Add dressing & mix well. The salad should be made several hours ahead & refrigerated, covered, to let the ingredients blend.

    To serve, place a Bibb lettuce leaf on each of 6 serving plates. Divide the salad among them and garnishwith slices from 2 eggs and parsley.

    Makes 6 servings.
