    Also called drawn butter. Clarified butter and its lemon variation are great for dipping succulent bites of seafood like lobster & crabmeat.

    Clarified butter has a higher smoke point than regular butter, can be cooked at a higher temperature, and will keep longer

    List of Ingredients




    1 cup butter

    Recipe



    Melt butter over low heat; fat will rise to the top, and milk solids will sink to the bottom. Skim off white froth that appears on top. Then strain off the clear, yellow butter keeping bacfk the sediment of milk solids.

    Chill clarified butter until ready to serve; then reheat.

    Yield: about 1/4 cup



    Lemon butter:
    Add 1/2 cup lemon juice to clarified butter, stirring well. Yield: about 3/4 cup
