    List of Ingredients




    1 Tablespoon olive oil
    2 lb. Ground beef
    1-1/2 cups onion; chopped
    2 cups carrots, sliced thin (or slivered)
    2 cups celery; diced
    One 28-oz. can diced tomatoes
    2 cups canned red kidney beans
    2 cups canned white kidney beans
    Two 48-oz cans beef broth
    1 Tablespoon dried oregano
    2 tsp. Pepper
    5 tsp. Parsley; (fresh chopped)
    1-1/2 tsp. Tabasco sauce
    Three 16-oz. jars spaghetti sauce
    8 oz. shell pasta
    1 Tablespoon plus 2 teaspoons chopped fresh parsley

    Recipe



    Saute beef in oil in large 10-qt. pot until beef starts to brown.

    Add onions, carrots, celery and tomatoes and simmer for about 10 minutes.

    Drain and rinse beans and add to the pot. Also add beef broth, oregano, pepper, Tabasco, spaghetti sauce, and pasta.

    Add chopped parsley. Simmer until celery and carrots are tender, about 45 minutes.

    Ladle the soup into bowls.
