    Picante Black Bean Soup

    List of Ingredients




    4 slices bacon, diced
    1 large onion, chopped
    1 clove garlic, minced
    2 cans (15-oz. each) black beans, undrained
    1 can (about 14-oz.) beef broth
    1-1/4 cup Pace picante sauce
    1/2-1 tsp. oregano
    sour cream
    additional picante saauce & crackers

    Recipe



    Cok bacon until crisp. Set aside. Add onion & garlic to drippings. Cook & stir 3 minutes. Add beans, broth, water, 3/4 cup picante sauce, salt & oregano. Cover & simmer for 20 minutes.

    Ladle into bowls. Top with sour cream. Sprinkle with bacon.


    Option: cut corn tortillas into thin strips, brown in oil & place on top of soup.
