    Chocolate Peanut Butter Silk Pie

    Chill: 8 hours

    List of Ingredients




    8 oz. cream cheese, softened
    1 c. sugar
    1 c. creamy peanut butter
    1 T. butter or margarine, melted
    1 t. vanilla extract
    1 c. heavy cream, beaten until stiff
    1-9 inch prepared chocolate cookie crumb crust
    1 c. semi-sweet chocolate chips
    3 T. brewed coffee
    chopped peanuts for garnish



    Recipe



    Beat cream cheese, sugar, peanut butter, butter and vanilla in a large mixing bowl until creamy. Gently fold in half of the beaten cream, blend, and then fold in remaining cream until well blended. Spread in crust; smoothing the top. Combine chocolate chips and coffee in a microwave proof bowl. Cover with plastic wrap. Microwave on high 1 1/2-2 minutes, remove and stir until smooth. Cool chocolate slightly, then pour over top of pie. Refrigerate 1 hour until chocolate is firm. Cover loosely and refrigerate overnight. Garnish with chopped peanuts if desired. Serves 8.
