    Banana Pecan Bread

    Vary the fruit and nuts as desired, or mix in a small amount of berries at the last minute.


    List of Ingredients


    • 2 1/2 cups plain flour
    • 1 1/2 cups dessicated coconut
    • 2 bananas chopped into chunks + 1 banana sliced (for decoration)
    • 300ml milk
    • 2 tsp baking powder
    • 1/2 cup chopped pecans + 1/2 cup whole pecans for decoration
    • 60g melted butter
    • 1/2 cup caster sugar
    • 2 eggs, lightly beaten


    Instructions


    1. Preheat oven to 180C. Grease 21cm x 11cm loaf tin.
    2. Combine sifted flour and baking powder into a large bowl, adding caster sugar, pecans, coconut and stirring.
    3. Combine remaining ingredients in a seperate bowl and fold in the dry ingredients a little at a time until the mixture is smooth.
    4. Pour into prepared tin and decorate top with sliced banana and whole pecans.
    5. Bake for 1 hour and 15 minutes. Test with skewer.
    6. Allow to cool in the tin 10 minutes before turning onto a wire rack to cool completely.
    7. Serve with butter, or toast and then serve with butter and honey.
