This is an ideal breakfast or lunch. It has everything you need. See below for variations.
List of Ingredients
- 2-3 slices bread (depending on size of loaf)
- 1/4 red onion, finely chopped
- 1 tbs lemon juice
- 2 tbs extra virgin olive oil
- 1/2 red chilli, seeds removed and chopped finely (optional)
- pinch salt
- pinch sugar (can omit)
- a good grinding of pepper
- 5-6 cherry tomatoes
- 1 ripe avocado
Instructions
- Mix lemon juice with oil and season with salt, pepper and sugar. Add in chili and onion.
- Finely chop or mash avocado into onion mix.
- Meanwhile toast bread (or grill it)
- Halve cherry tomatoes and mix into avocado mix. Heap onto slices of bread and enjoy. A glass of juice and an expresso round off the perfect healthy breakfast.
Final Comments
-if you want even less fat reduce or omit oil
-low fat yoghurt or sour cream can be used instead of dressing (ie oil, lemon and sugar)
-fresh garlic or herbs are nice in the avocado mix if you feel like it
-for a salsa to serve over grilled meat just use the avocado mix as is, or add mango or green apple to it.
