    Cabbage Piragi

    Recipe Introduction


    This is the lesser known version of the Latvian Classic Piragi. When my sister gives me the traditional piragi recipe i will post that too


    List of Ingredients


    • piragi dough (or a good bread dough preferably with butter and milk in it)
    • butter
    • 1/2 cabbage
    • 3 hardboiled eggs
    • salt and pepper to taste


    Instructions


    1. Make up the bread dough and leave to prove.
    2. Shred cabbage into thin slices. Heat butter gently and saute cabbage (quite a lot of butter needed). Keep covered on a low heat stirring frquently for about 10 minutes until wilted but not mushy.
    3. Chop up hardboiled eggs and mix through cabbage with salt and pepper.
    4. Let cabbage mix cool.
    5. Roll out dough quite thin. Spoon cabbage in the middle and enclose making large pasty shape.
    6. Alternatively cover the bottom of a square tin or lasagne tray with a layer of dough. Spoon cabbage over the top and finish with another layer of dough.
    7. Bake in 180C oven for about 20-40 minutes until golden brown and fragrant. Cut into slices or squares and serve warm with soup or cold as part of buffet.
