    Microwave coconut Butterscotch Pudding

    List of Ingredients


    • 2 tbs golden syrup
    • 100g butter
    • 1 3/4 cup SR flour
    • 1/2 cup brown sugar (press out lumps) not the raw one
    • 1/2 cup dessicated coconut
    • 2/3 cup coconut milk (or for milder flavour use normal milk)
    • 1 egg
    • 1 tsp vanilla
    • 2 cups boiling water
    • 1/3 cup golden syrup
    • 3/4 cup brown sugar (more)
    • 1 1/2 tsp cornflour
    • toasted flaked coconut


    Instructions


    1. Place 2 tbs golden syrup and the butter in a microwave safe bowl and microwave 1 minute on high until butter starts melting (don't overcook)
    2. Mix together flour, 1/2 cup brown sugar, dessicated coconut.
    3. Combine microwaved mixture with 2/3 cup coconut milk (or milk). Mix in 1 egg, 1 tsp vanilla. Mix it all through then add to dry ingredients.
    4. Mix together sauce ingredients - 2 cups boiling water, 1/3 cup golden syrup, 3/4 cup brown sugar, 1 1/2 tsp cornflour.
    5. Mix sauce ingredients together really well and pour over back of spoon onto pudding.
    6. Microwave 12-14 minutes medium power. Sprinkle with toasted flaked coconut and serve with cream or icecream.
