    List of Ingredients


    • 1 1/3 cups plain flour
    • 2 x 425g cans peach pie filling
    • 1 egg
    • pinch baking powder
    • 100g butter, cubed
    • 1/4 cup caster sugar
    • 1/4 cup passionfruit pulp
    • 1/4 cup flaked almonds
    • 1/4 cup cornflour


    Instructions


    1. Place flour and baking powder in a food processor. Add butter and blend until evenly distributed.
    2. Combine egg and sugar together and add to flour mixture. Blend into ball.
    3. Roll out 3/4 of mixture to line 25cm flan tin (with a removable base). Refrigerate for 10 minutes.
    4. Line pastry with greaseproof paper and load with rice or beans. Bake 200C for 15 minutes. Remove loading (can reuse next time) and bake at 180C a further 10 min.
    5. Combine peach, cornflour and passionfruit. Place fruit mixture in pastry case. Grate remaining pastry over the surface and sprinkle with almonds.
    6. Bake at 200C 20-30 minutes or until pastry is golden. Cool and cut into wedges.
