    List of Ingredients


    • 1/2 cup hot mashed potato
    • 3/4 cup milk
    • 1/2 tsp lemon essence
    • 1 tbs softened butter +125g
    • 1/2 cup sultanas
    • 2 cups self raising flour
    • 1 egg, beaten
    • 1 cup sugar + 1 cup
    • 1 cup apricot puree made from 200g apricots lightly cooked in a little water then drained
    • 1 cup plain flour
    • nutmeg


    Instructions


    1. Combine potato, 1 tbs butter, egg, milk, sultanas, 1 cup sugar, lemon essence and self raising flour. Mix well.
    2. Spread mixture into buttered and lined swiss roll pan.
    3. Spread apricot puree all over cake.
    4. Rub plain flour, 1 cup sugar and nutmeg into 125g butter until crumbly. Spread crumble mixture over cake and bake 190C for 30 mins.
