    Final Comments

    If you prefer...
-use 2 tsp of your favourite liqueur instead of coffee. Mint is a nice flavour here
-or use zest of one small orange (make sure very very fine)
-Coat small macaroons with the melted chocolate, allow it to set. Sandwich together with piped truffle mixture.
-spread small amounts of melted choc onto foil to make very thin 2.5 cm disks. Allow to set then sandwich together with piped truffle mixture.
-Roll truffle mixture into small balls. Dip in melted chocolate, then roll immediately in crushed nuts or crushed praline (or nothing) before chocolate sets.
