    Recipe Introduction


    I omit the bacon as i don't like it. But most people love how it melts into the sauce


    List of Ingredients


    • 500g beef (or kangaroo) pieces
    • 12 small onions whole
    • 1 lge onion finely chopped
    • 12 small mushrooms whole
    • 2 carrots thickly sliced
    • 1 cup red wine
    • 4 cloves garlic (optional)
    • 2 rashers bacon, finely chopped
    • salt and pepper to taste
    • olive oil or butter (or both)


    Instructions


    1. Heat oil/butter and fry bacon, garlic and chopped onion until tender. Add meat and stir until browned.
    2. Seperately caramelise the whole onions in oil/butter
    3. Add carrot pieces and caramelised onions to meat. Use the onion pan to gently cook the mushrooms in some butter with pepper.
    4. Add wine and bayleaf (optional)to the meat and vegetables. Cook gently for 1 hour.
    5. Add mushrooms and cook at least 20 minutes more. Adjust seasoning
    6. Serve with potatoes or bread
