Recipe Introduction
I omit the bacon as i don't like it. But most people love how it melts into the sauce
List of Ingredients
- 500g beef (or kangaroo) pieces
- 12 small onions whole
- 1 lge onion finely chopped
- 12 small mushrooms whole
- 2 carrots thickly sliced
- 1 cup red wine
- 4 cloves garlic (optional)
- 2 rashers bacon, finely chopped
- salt and pepper to taste
- olive oil or butter (or both)
Instructions
- Heat oil/butter and fry bacon, garlic and chopped onion until tender. Add meat and stir until browned.
- Seperately caramelise the whole onions in oil/butter
- Add carrot pieces and caramelised onions to meat. Use the onion pan to gently cook the mushrooms in some butter with pepper.
- Add wine and bayleaf (optional)to the meat and vegetables. Cook gently for 1 hour.
- Add mushrooms and cook at least 20 minutes more. Adjust seasoning
- Serve with potatoes or bread
