List of Ingredients
- 1 tsp groud turmeric
- 1 tsp ground coriander
- 2 tbs plain flour
- 1 tbs peanut oil
- 750g (4 pieces) chicken cutlets
- 1/ tsp ground cumin
- 1 onion, cut into wedges
- 2tbs tomato paste
- 1 1/4 cup chicken stock
- 4 (about 400g) flat mushrooms, thickly sliced
- pan fried potatoes to serve
Instructions
- Combine turmeric, cumin, coriander and flour in a bag. Add chicken and toss to coat.
- Heat 1 tbs oil in large frypan over med-high heat. Add chicken. Cook for 3-4 minutes on each side or until golden. Remove and set aside.
- Add onion to pan. Cook over medium heat 2-3 minutes until onion is soft. Add tomato paste. Cook for 1 minure.
- stir in stock and mix well. return chicken to pan, cover and cook 20 minutes or until chicken is cooked through.
- Remove lid. stir in mushrooms. Cook uncovered 8-10 minutes or until mushrooms are tender and sauce thickens slightly.
- Serve with the potatoes
