    List of Ingredients


    • 1 tsp groud turmeric
    • 1 tsp ground coriander
    • 2 tbs plain flour
    • 1 tbs peanut oil
    • 750g (4 pieces) chicken cutlets
    • 1/ tsp ground cumin
    • 1 onion, cut into wedges
    • 2tbs tomato paste
    • 1 1/4 cup chicken stock
    • 4 (about 400g) flat mushrooms, thickly sliced
    • pan fried potatoes to serve


    Instructions


    1. Combine turmeric, cumin, coriander and flour in a bag. Add chicken and toss to coat.
    2. Heat 1 tbs oil in large frypan over med-high heat. Add chicken. Cook for 3-4 minutes on each side or until golden. Remove and set aside.
    3. Add onion to pan. Cook over medium heat 2-3 minutes until onion is soft. Add tomato paste. Cook for 1 minure.
    4. stir in stock and mix well. return chicken to pan, cover and cook 20 minutes or until chicken is cooked through.
    5. Remove lid. stir in mushrooms. Cook uncovered 8-10 minutes or until mushrooms are tender and sauce thickens slightly.
    6. Serve with the potatoes
