Easiest Lamb Casserole

This is inexpensive and a good winter comfort food. It reheats well. If you need to make a dish for a soup-kitchen or whatever this works in large quantity
List of Ingredients
1-2kg lamb chops (or any cheap cut)
4 or more carrots
2 or more onions
1-2 packets french onion soup mix
pepper
water
Recipe
1. Preheat oven to 180C. Fry the lamb chops until browned and partially cooked.
2. Lightly fry sliced onion
3. Place chops and onion in casserole with sliced carrots. Sprinkle with pepper and soup mix. Pour over water to just cover.
4. Bake until fragrant and cooked through. A good test is if the carrots are tender.
5. Serve over creamy mashed potato or brown rice.
