    serves 4
    preperation time 10 minutes (sic)
    cooking time 1 1/2 hours

    serve with rice or rissoni. Scatter with slivered almonds if desired


    List of Ingredients


    • 500g casserole beef (2cm dice) - I sometimes use roo
    • 1 brown onion, peeled and diced
    • 1/2 tsp ground cinnamon
    • 3 cups (700ml) chicken stock liquid
    • 100g dried apricots
    • 100g pitted prunes
    • 2 tbs olive oil


    Instructions


    1. Coat beef in cinnamon and half the oil. Brown in heated casserole pot over medium to high heat in 2 batches. Set aside.
    2. Cook onion is remaining oil until transparent. Return meat to pot adding stock, cover and bring to boil.
    3. Reduce heat to low and simmer covered 1 1/4 hours stirring occaisionally. Add plums and apricots and cook a further 15 minutes.
    4. (alternatively place in preheated 160C oven for 1 hour 10 minutes. Then add in dried fruit and heat a further 5 min.
